In order focus on healthy eating during the week I have to have food prepared or I am destined to go for whatever is easy and I usually am looking for healthy chicken recipes. As part of my menu planning I like to keep lunch in mind so that I don’t go overboard in this area. I also need it to be something low maintenance but flavorful so that I will be excited to eat my lunch. I’ve seen a lot of meal prep ideas and this is how I do it.
I like to purchase chicken tenderloins and bake them on Sunday. I also make some vegetables and brown rice to pair with the chicken.
To keep the chicken interesting I top it with a variety of sauces and I’m able to change up my simple chicken for lunch every day.
The chicken tenderloins are seasoned with pepper, salt, garlic powder and topped with a very small pat of butter and lemon slices. Then I add a variety of sauces:
- corn and black bean salsa
- artichokes and olives
- barbecue sauce
- tomato sauce and low-fat mozzarella cheese
